<p><strong>Ingredients</strong><br />
Green Beans 300g<br />

<p><strong>Ingredients for the batter</strong><br />
Rice Flour 120g<br />

Water 120ml</p>
<p><strong>Directions</strong></p>
<p>Boil the green beans until they are tender, adding more water when necessary. When the beans have broken up and most of the liquid has been absorbed or evaporated, add the sugar, coconut, plain flour and salt. Stir the mixture until it is very mushy. Remove from heat and cool.</p>
<p>Shape a portion of the mixture (about the sixe of a small egg) and shape it into a ball. Flatten the ball slightly to make about 1cm thick patties. Continue making patties until there is no more mixture left.</p>
<p>Combine all the batter ingredients till you get a smooth consistency. You may add just enough water to acheive that.</p>
<p>Heat the cooking oil for deep frying. Coat the patties with the batter, and then deep fry until it is crisp. Remove and drain well before serving.</p>
<p>It can be served hot or cool.</p>

<p align="left">I am introducing a new category in my cookery blog and in this section I will be sharing Malay food recipes and cooking tips.   Was trying to think of a recipe that can be appreciated by readers from both East and West, I have decided to post the recipe for this incredible piece of creation.    This is one of my very favourite dishes, if you love mashed potatoes, you will love this Malay version which has minced meat inside, and mash potatoes will never be eaten the same way again!  If you like the look of the begedil, try this recipe.  The Malays would eat them with rice and some other dishes but you know what, most people secretly prefer to eat them without anything else.  Let me give you my estimates on the ingredients.</p>
<p align="left"><strong>Ingredients:</strong> 1 kg potatoes; 150g minced beef; 2 stalks of cilantro ; 1/2 cup fried shallots; 2 eggs, salt and pepper to taste, cooking oil</p>
<p align="left"><strong>Method:</strong> Wash and peel potatoes, slice thickly and fry till cooked (not too dark).   Mash them, using a mortar.  Fry-dry the minced beef for a while.  Chop the cilantro.  Mix all ingredients together except the eggs, till well mixed.  Shape into a ball as seen in the picture.  Separately beat the eggs.  Heat oil in a saucepan, once ready, dip the begedil individually in the beaten eggs and drop into the hot oil.</p>
<p align="left">These pieces usually sell for fifty cents  (SGD) a piece without the minced meat.  Imagine how much you save if you do this yourself, plus you be generous with the meat.</p>

			<content:encoded><![CDATA[<p>In English, this means stuffed glutinuous rice.    To find out what&#8217;s stuffed inside, check out the recipe.  I promise you this is another great food to try!  I realise there are many people in the West who do not know who are the Malays and where they come from.  You will find out more as I feed more recipes in this blog and more tidbits of the influences on the Malay culinary.</p>
<p><strong>Ingredients</strong>: 180g glutinuous rice soaked overnight or for at least 6 hours; 250ml coconut milk mixed with 1/2 tsp salt; 2 tbsp grated coconut (without the skin); 1/4 pc of palm sugar or gula melaka; 30g granulated sugar; 2 tbsp water; 1 pc of pandan leaf or screwpine leaf; 8 pcs banana leaves or 6&#8243; x 8&#8243;.</p>
<p><strong>Method:</strong> Prepare steamer by boiling water.  Wash the glutinous rice and strain. Place tray on steamer and steam for 5 minutes.  Add enough coconut milk to cover the rice. Mix well.  Steam again till it is cooked for about 20-25 minutes.  Check from time to time and stir and add coconut milk if necessary.</p>
<p>To prepare filling  &#8211;  Dissolve sugars.  Add grated coconut and pandan leaf.  Cook till the mixture is soft and dry.   Remove from heat and let it cool.</p>
<p>To prepare the kuih &#8211; Soften banana leaves by dipping into boiling water for at least 30sec.  Put 1 tbsp cooked glutinous rice on banana leaf.  Add 1 tsp filling on top of the rice.</p>
<p>Fold  both ends of the leaf over the kuih, ensure that the top is slightly open to show a bit of the filling.  Fold both ends downwards.  When all the mixture is used up, serve on a plate.  Enjoy with a cup of hot tea!</p>
