Fried Rice
Fried rice has got to be one of the most comforting foods to eat, easy to cook, has universal appeal and can be cooked in twenty or more different versions. You can do it by country version, or by meat version or seafood version or vegetable version or combination of all of these. There’s cross breed version - LOL! Personally I like the Thai version but have never been able to achieve the right taste!
I got this recipe from one of the local tv stations and it looks pretty awesome. I do not know which country version this is, but the use of sauces tells me this could be a Chinese version and I have translated it in English. I hope this turns out good cos I have never tried it but I certainly will, after this.
Ingredients:
4 plates of cooked rice (cold)
200g medium prawns (remove shell)
200g squid, clean thoroughly
200g mackerel, cut into cubes, remove bones (fish fillet another option)
1 stalk of lemon grass,bruised
2 red chillies, sliced thinly
2 green chillies, sliced thinly
3 garlic, sliced
1 large onion, chopped
Some ginger, thinly sliced lengthwise
1 tbsp oyster sauce
2 tbsp light soy sauce
1 tbsp abalone sauce
200g cabbage, sliced thinly
250g chye sim or mustard leaves, chopped
Some cooking oil
For garnishing
Coriander leaves, chopped
Fried shallots
Method
Heat oil in a wok. Fry lemon grass till you smell the fragrant. Add red and gree chillies, garlic, chopped onion and ginger. Stir till the mixture is limp. Add prawns, squids and fish. Add the sauces. Mix well but do not over mix as the fish meat is easily broken. Cook till the mixture thickens.
When the squid and prawns are cooked, add the vegetables, stir for a while till it’s well mixed. Lastly add the rice and mix well. Garnish with coriander leaves and fried shallots.
P/S: Personally I have never cooked using abalone sauce and if you do not have such a sauce in your fridge, I would think the recipe ingredients are quite sufficient to deliver its promise!

Here’s a little tip you may want to use when you next cook Fried Rice … “Add the beaten egg to the rice
BEFORE frying.”

I simply luv fried rice! They are very diversified too. I usually used left over rice fm last nite dinner and a gfren told me that the secret to a tasty fried rice is to use “used oil” (minyak jelantah). It is basically the left over oil fm yr fried chicken or fish… Try it! It makes a whole lot of different! Javanese (that me! he.. he..) usually like to eat the fried rice with “keropok”, “empeng” or “peyek”… Heaven…
