The humble anchovies with potatoes
In local language that means, Ikan Bilis Kentang….
I wanted some quickie dish and I raided the kitchen for whatever raw ingredients available. I found a pack of anchovies and saw the last piece of potato. In the average Malay kitchen, there’s always onions, fresh chillies, dried chillies, garlic, so I whipped up this simple dish using the following:
Ingredients:
Anchovies (I grabbed two fistfuls); a potato or two ; 2 tbsp dried chilli powder; onion; garlic; a sprinkle of sugar; salt to taste.
Method:
Wash anchovies thoroughly and drain. Heat a frying pan with cooking oil and deep fry the anchovies till crispy. Remove from heat. Peel potatoes and wash and drain. Deep fry till cooked and crispy, remove from heat. Peel onion and garlic, and slice them. Saute onion and garlic till fragrant, add dried chilli powder and salt and fry for a while. Then add the anchovies and potatoes. Mix well, sprinkle some sugar over it.
Should look something like this. It would have been nice if I had lemon juice to squeeze over it. Can be more or less spicy. Eat with steaming hot white rice or porridge.
