Goulash Soup For The Diabetic
As recommended by dietician. It has been a while since I shared recipes with the diabetics, here you go, another hearty recipe to try!
Ingredients:
2 cups chopped onions; 3 tbsp vegetable oil; 1 pound beef round; 8 cups fat-free broth; 1/4 tsp garlic powder; 2 tsp paprika; 1/2 cup drained, crushed, canned tomatoes; salt to taste; 1-1/2 cup diced fresh white potatoes
Method:
Brown onions in 2 tbsp vegetable oil in a frying pan over medium heat, stirring occassionally. Transfer onions with a slotted spoon to a heavy saucepan. Add remaining tbsp of oil to frying pan. Trim all visible fat from the beef and cut it into 3/4 inch cubes. Brown beef in the frying pan over medium heat, stirring occassionally. Transfer meat with a slotted spoon into saucepan with the onions. Discard as much fat as possible from the frying pan.
Add broth to frying pan and cook an dstir over low heat to get as many of the brown particles in the pan as possible into the broth. Pour the hot broth into the saucepan with the onions and meat.
Add seasonings and tomatoes to meat and broth. Cover and simmer over low heat until meat is tender. Remove from heat. Cool to room temperature. Refrigerate until thoroughly chilled and the fat has risen to the top. Remove the fat and discard it. Return the soup to heat. Taste for seasoning and add salt, if necessary. Add potatoes to soup. Cover and simmer for 15-20 minutes or until the potatoes are tender.

Hi Nora!
I will definately try your chilli crab next week. It sound delicious. Just made pepper crab for all my siblings last week.
Please tell me how to make a good broth. It sound silly ya. I would like to make the goulash.
