Meat Dish for Diabetics : Beef with Green Beans

Simple, delicious and healthy, this recipe is as recommended by dietician. 

Ingredients:

8 ounces round of beef (all fat removed); 2 tbsp soy sauce; 1 tbsp cornstarch; 1/2 tsp salt; 1 tbsp sherry or beef broth; 1 tbsp vegetable oil; 1/4 cup water; 1 pound frozen green beans cut into 1-inch lengths.

Method:

Cut beef into 1/8 - 1/4 inch thick and 1-inch long pieces.  Mix well soy sauce, cornstarch, salt and sherry or broth.  Pour over the meat.  Mix lightly and let stand at room temperature for about 1/2 hour, or refrigerate for several hours or overnight.  Drain well, reserving the marinade.

Spread oil in a frying pan and heat it up.  Drain the meat well and fry, stirring frequently, until the meat is no longer pink.  Add 1/4 cup water to the meat along with the reserved marinade.  Stir lightly over medium heat.

Add green beans to meat mixture.  Cook and stir until beans and meat are well coated with the sauce.  Cover and cook, stirring occasionally, until beans are crisp-tender.  Serve about 3/4 cup per serving over rice or noodles.
