Chocolate Bread Pudding

This chocolate dessert is served with hot fudge sauce, making it the most delicious way to use up bread that is slightly stale.   Always handy to know whenever you dont want to waste that bread. 

Ingredients: 

 6 thick slices white bread, crusts removed ; 2 cups canned evaporated milk; 2 tbsp unsweetened cocoa; 2 eggs; 2 tbsp molasses sugar; tsp vanilla extract; confectioners’ sugar, to dust

Hot Fudge Sauce:  1 tbsp cornstarch; 1/2 cup milk; 2oz/55g semisweet chocolate, broken into pieces; 1 tbsp unsweetened cocoa; 2 tbsp light corn syrup; 1/4 cup butter or margarine; 1/2 tbsp molasses sugar

Methods:

1)  Grease a shallow ovenproof dish.  Cut the bread into squares an dlayer them in the dish.

2)  Put the milk, evaporated milk, and cocoa in a pan and heat gently, sitrring occasionally, until lukewarm.

3) Whisk together the eggs, sugar, and vanilla extract.  Add the warm milk mixture and whisk well.

4) Pour into the prepared dish, making sure that all the bread is completely covered.  Cover with plastic wrap and chill in the refrigerator for 1-2 hours.

5) Bake the pudding in a preheated over, 350F/180C, for 35-40min , until set.  Remove the pudding from the oven and let  stand for 5 minutes.

6)  To make he sauce, mix the cornstarch to a smooth paste with a little of the milk, then place in a pan with the rest of the milk and the remaining sauce ingredients.  Heat gently, sitrring constantly, until smooth.

7) Dust the pudding with confectioners’ sugar and serve imediately with the hot fudge sauce.

Serves 4
