Two ways to do your butter cake!
I have been incredibly busy the last two weeks, what with festivities of celebrating end of Ramadan (fasting month), and the baking and cooking - on top of the kid’s exam period. Any true-blue Singaporean parents will agree with me, exam period is a time for parents to lock up the kids in the room and study!
Anyway, I had promised to share some cookie recipes which I have baked for the festive season, however, I haven’t had the chance to put the pictures together. But I will share this glorious butter cake which I have done in two ways, the old-fashioned way and the cupcake way. Learned this in a baking school too:) Yes the butter cake is meant to crack at the top (it’s better to crack than not, so I was taught, why? I can’t remember).
So simple, so hearty, so delicious. The basic ingredients are similar to the original English Pound Cake (supposed to be a pound of measurement for each ingredient), but we mere mortals use the metric system, so here we go:
Ingredients: 250g butter, 250g castor or fine sugar (I use slightly less, like 230g); 250g eggs (about 5 eggs); 250g self-raising flour; 20g fresh milk (since I use self-raising flour, I simply added a pinch of baking powder).
Method: Heat oven to 180C. Beat butter and sugar till light and creamy using electric mixer, always remember to scrape the side of the bowl. Add the eggs one by one. Then add the flour which has been sifted with the baking powder. Lastly add the milk. Do not overbeat.
Cupcakes: This batter can make about 30 cupcakes. Use cupcake mould otherwise the paper will not withstand the weight of the batter. Add walnut and raisins on top of the cupcake. Bake for 15 minutes, ensure it’s baked before removing from the oven.
Baking tin of 8×8: Line the tin with greaseproof paper. Pour the batter into the tin, you have a choice of leaving it plain or add anything you fancy to decorate the top - I used almond flakes for this as you can see. You can use raisins if you wish. Just remember to roll the raisins in flour before adding into the batter, this will ensure they don’t sink to the bottom. Bake for 50 to 60 minutes.
There you go! Psychologically it’s interesting to note, the cupcake seems to generate greater interest than the other one. Maybe it’s the walnuts that really makes the difference!
