Quickie Potato with Fried Eggs

If you love potatoes like I do, this has got to be one of life’s simplest pleasures, and cheap too! I don’t think there is a written recipe anywhere for this and I learned this from my late mother, who kind of tossed in those things and in a minute it was done.
Here is the recipe, from my own “toss” into the wok.
You need: About 3-4 large potatoes, wash and boil till its soft. Remove from heat and wash under cold water. Peel off the skin and cut into cubes, as in the picture. Set aside. Peel 3 large onions, slice (ring shape). In a wok, heat up some oil, fry the onions till soft and fragrant. Add in the potatoes and stir fry for a while, break 3 eggs (one at a time) and mix well. Add in pepper and salt, according to your tastebud.
This is so easy, so hearty, so delicious, the west would love it for the potatoes, the east would love it for being mixed with fried eggs and the salt and pepper is well, pretty universal:)
PS: Personally I would use a lot of onions, and fry it till really limb but not burnt, and the eggs could be more if you so wish.
